Aah. Right - have fun, there are a few high res packs out there over the 16x16 defaults, but from going down that rabbit-hole myself previously I now just use the default textures.

A good guideline for building is even if you build it for a given texture pack, you'll still want it looking good for the vanilla pack - the greater majority of players use vanilla.

However there's two packs I would consider myself:
Faithful a 32x32 pack that's been updated for years https://resource-pack.com/faithful-1-17-32x/
Steven's Traditional 64x64 contemporary pack, slightly tweaked from Vanilla, but again mostly quite faithful. https://www.minecraftforum.net/forum...ithful-default

I tend to stay away from the 256x and high packs - they don't really add anything unless you're still.

Another option is install Optifine or one of the other options that allows deployable shaders, and get one of the pretty spectacular shader packs that are out there. Awesome for doing the "wow! Pretty!!" but pretty pants for actual gameplay IMO.

Small word of warning though: Don't mix packs of various resolutions. I don't know if it does anymore, but it used to make the game client unstable.
