Everything Linux (though that's a but of a misnomer now - it's not just Linux nowadays) have a reasonable variety and can do one-offs (though they charge like a wounded bull for those)
EDIT: Other then that, just seems to be the common ones (Redhat/SUSE/etc) at just about any reasonable-sized computer and parts retail shop
