A camera only has a set range of black to white, you can shift where the mid point of the range is to expose for shadows or highlights. eg: in a sunset scene; you could expose for the sun and capture the highlights, leaving the shadows totally black. Or you can expose for the shadows, leaving the highlights white.

Hdr comes in by taking both shots and combining them together, so you extend the range of white to black levels.


To answer your question, the shots most suitable are those with a large dynamic range eg bright parts, and dark parts. Inside churches seems to be classic (bright windows, dark seats)
A lot easier if the scene isn't moving.

etc
forests
